Marinated beans with sambal oelek

Crunchy beans filled with protein. This salad takes a bit longer to prepare.

- Put the dried beans in a big pot (3 liters) and fill it with cold water. Let the beans be for 10 hours. Its OK to boil the beans without letting them immerse but note that it will take longer to cook them.
- Rinse the beans and boil them withBay leaves, Vegetable broth and salt for about 40 minutes.
- Boil the star anise with 2 dl vatten until there is only ½ dl of water left.
- Remove the star anise. Save the broth that's left.
- Mix oil with Sambal oelek, cider vinegar and the broth.
- Pour the marinade over the beans and stir.
- Garnish the salad with chives.
